Question #2

Chocolate, New York and romance all seem to go together. At my local book signings, I always give away homemade chocolate truffles, and I’ve been asked more times than I can count for the secret recipe. What’s your favorite chocolate indulgence? Anyone care to share their own special recipe?

    Ooohh, my favorite chocolate indulgence. A cake-like brownie that makes its own fudge sauce in the bottom of the pan while it bakes. It’s really easy and with a little vanilla ice cream on it while it’s warm . . . . mmm. I’m going to have to find that recipe.

    If I had a recipe for these I would definitely share it!!! I love to eat milk chocolate covered carmels! If I find a new chocolate store, I base how great the store is by how good the carmels are ..LOL..If a store can make a great chocolate and carmel than I am a dedicated lifetime shopper in that store :) :)

    Oh, also turtles are really good too!

    I am going to have to find some chocolate now and I’ll have to look at my recipes for something to share!!

    I love chocolate cake, brownies and ice cream. I just a book with the recipie of an iced chocolate cake. I hope to try it out very soon, when it is not so hot here.

    Godiva chocolate is one of my favorites although I also love fudge, brownies and chocolate chip cookies.

    I love good choc. truffles - especially dark chocolate. A Good chocolate cake, choc. cream pie, fruit desserts, cheesecake - you get the picture - I love my desserts. Out east there is a choc. shop that makes the best dark choc. fudge with walnuts. Cheesecake Factory makes the best cheesecake with real whipped cream.

    I live in NY about 1 hr from NYC - going on a boat ride with 2 girlfriends next week to pass different sites in the city.

    Oh..I just thought of chocolate covered strawberries..How could I forget those wonderfull things!!(I’m blaming it on chocolate withdrawal..LOL)

    I also enjoy my cheesecakes! BUT they have to be made correctly!

    Wow, I’d love to try your homemade truffles. You can share that secret recipe if you want. *g* If I win, I’ll send you my favorite cookie recipe. Peanut Blossoms. Peanut butter cookie with a Hershey Kiss on top. Delicious!

    The problem with truffles, is that they’re more a technique than a recipe. I’ve given it out to a few people, but you really need to come on over to the house and make them with me. There’s a group of us who do it every Christmas.

    One of my very favorite chocolate treats, which I will share once I drag out the recipe, is called Nanaimo Bar. It’s a Western Canadian regional dish. Anybody heard of it?

    Nanaimo Bars are delicious!!!! I live in Sask., Canada and used to make them every Christmas.

    I love chocolate in many forms; yummy. One of my favorites is Farmer’s Brownies with chocolate icing and a half pecan on each slice.

    Never heard of the Nanaimo Bar. Sounds like a fun Christmas Tradition - making them.

    Oooh Farmer’s Brownies sound so good.

    I am not much of a baker - so I have no chocolate recipes - I buy my candy goodies.

    I love fudgy brownies. I have heard of nanaimo bars but never tried them. Since I am pregnant and due in October I just don’t have the energy to bake and try new recipes. I have had to buy some or in a pinch I have been making the boxed stuff. I don’t have any recipes to share right now since I have not been able to bake for awhile. I really miss that but I don’t see that changing any time soon. I don’t mind so much though. My baby girl is worth such a smll sacrifice.

    A recipe I had found and try. I love it *Smiles*

    This brownie recipe is made with chocolate and chocolate chips, along with pecans or walnuts, if you want.
    1/4 cup butter
    3/4 cup sugar
    1 teaspoon vanilla
    1/4 cup corn syrup
    2 eggs
    2 ounces unsweetened chocolate, melted and cooled
    1 cup all-purpose flour, sift before measuring
    1/2 teaspoon salt
    1/2 teaspoon baking powder
    1/2 cup chocolate chips
    1/2 cup chopped pecans or walnuts, always an option

    Directions for this brownie recipe.
    Cream together butter and sugar until fluffy. Add vanilla and syrup and continue beating. Beat in eggs and cooled chocolate. Into a separate bowl, sift dry ingredients. Stir dry ingredients into the batter. Fold in chocolate chips and pecans. Spread brownie mixture into a greased and floured 9-inch square baking pan; bake at 350° for 20 to 25 minutes. Cut brownies into bars.

    KimH here is a recipe you can try for chocolate cheesecake :)

    Chocolate Cheesecake

    8 1/2 ounces chocolate wafer crumbs
    1/3 cup butter, melted
    2 tablespoons granulated sugar
    1/4 teaspoon ground nutmeg
    3 large eggs
    1 cup granulated sugar
    3 (8-ounce) packages cream cheese, softened
    2 cups semisweet chocolate chips
    1 teaspoon vanilla extract
    1/8 teaspoon salt
    1 cup sour cream
    1 cup cream, whipped
    2 tablespoons powdered sugar
    In a blender or food processor, grind chocolate wafer crumbs until fine. Combine with melted butter, 2 tablespoons sugar, and nutmeg; mix well. Press evenly over the bottom and up the sides of a 9-inch springform pan. Chill.
    In a mixer bowl, combine eggs and 1 cup sugar. Beat at high speed until very thick and light. Add softened cream cheese and beat until smooth.
    Melt semisweet chocolate chips in the top of a double boiler over hot water. Cool. Blend into the cream cheese mixture with vanilla, salt, and sour cream.
    Pour into the prepared pan. Bake at 325°F (160°C) for 1 hour, or just until firm. Cool in the pan on a wire rack. Chill. Remove from the pan. Whip cream with powdered sugar until stiff. Spread over the cheesecake.

    Found my brownie recipe that makes the hot fudge pudding in the bottom as it bakes.

    1 c. all-purpose flour
    1/2 c. sugar
    1/2 c. unsweetened cocoa, divided
    2 t. baking powder
    1/4 t. salt
    1/2 c. milk
    2 T. butter or margarine, melted
    1 t. vanilla extract
    1/2 c. semisweet chocolate chips
    1/2 c. firmly packed brown sugar
    1-3/4 c. boiling water

    Preheat oven to 350 degrees F. Combine flour, sugar, 1/4 c. cocoa, baking powder and salt in bowl. Stir in milk, butter and vanilla until smooth; stir in chocolate chips. Spread in ungreased shallow 1-1/2 quart casserole.

    Sprinkle brown sugar and 1/4 c. cocoa on top. Pour boiling water over the topping. Bake 35 minutes. Cool 10 minutes before serving. Serve with ice cream. Makes six servings.

    Tastes like a hot fudge brownie sundae. Yum!

    I love brownies, home made brownies. I can’t cook so I have to depend on others to provide them or I can make them from a box mix. Usually I can find good ones at a bakery. Do you do book signings around Chicago? Cause I’m coming if you do.

    Here’s my contribution.

    Nanaimo Bars

    In a double boiler, melt 1/2 cup butter
    Add 1/4 cup white sugar and
    5 tablespoons coco.

    Remove from heat
    stir in one egg and
    1/2 teaspoon vanilla.

    Stir in
    1 cup coconut
    2 cups graham cracker crumbs.

    Spread the mixture into a square cake pan (8×8)
    press firmly, and allow to cool.

    Top with
    1/4 cup softened butter
    2 cups icing sugar
    2 tablespoons custard powder
    3 tablespoons cream.

    Top with
    3 ounces of melted chocolate.

    Tip: cut it into squares as soon as the chocolate has lost its shine, but before it has fully hardened. Then allow to fully harden before removing the squares from the pan.

    Wow…all this talk about chcolate, and I’m going to have to start making my Easy Chocolate Fudge recipe.

    1 stick butter or margarine, melted in heavy skillet, then add
    3 Tablespoons cocoa powder and slowly add
    1 pound of confectioners sugar. Add
    1 teaspoon vanilla flavoring, and if the mixture is too stiff, add
    milk one teaspoon at a time until the mixture is easier to stir, but not runny. Beat it up a bit with a large spoon to get some air into it to lighten it up a bit. Pour into an 8 x 8 pan or glass dish to set. Cut before completely cooled.

    This only takes a few minutes to make. May have to make it a few times to get the kinks worked out, but worth the effort. A neighbor in Texas gave me this recipe over 40 years ago, and both my daughters and I still make it.

    Probably should have said powdered sugar instead of confectioners sugar…same thing.

    Does anyone know where to get custard powder or can I substitute pudding mix for it?

    but if they aren’t available where you live try this fudge recipie.

    Idiot Proof Microwave Fudge

    2 cups soft dark brown sugar
    3/4 cup soft butter or margarine
    can condensed milk
    choc melts

    Put sugar, butter & condensed milk in a large microwave bowl.
    Microwave on High for 9 minutes stirring every 3 minutes
    Add choc melts and stir until combined well (comes away from sides)
    Pour into a greased and lined baking tray
    Cut when cold

    to make christmas fudge use dark choclate, rum essence & jar of fruit mince.

    for turkish delight fudge add 1/2 bottle of rosewater essence just before the chocolate.

    if you like ginger or nuts add just before the chocolate.

    As soon as apples are ready to be picked I am in a baking frenzy until after Christmas!!! I love being able to have windows open and the smell of fresh baked goods in the house…and of course those baked goods in my stomach!! :)
